Max’s is a popular Filipino chain with down-home cuisine featuring all the classics: lechon, pancit, sisig, kare kare, crispy pata, dinuguan, and much more. Not sure if all the Hawaii locations have it, but the Dillingham restaurant was promoting a new dessert that combined some favorites: Sizzling Biko. The caramel coconut rice patty was topped with a small ice cream scoop and a cube of leche flan, and the server poured ube sauce onto the hot pan tableside - hence the sizzle. I came expressly for that dessert twice - the first time the pan wasn’t that hot so there wasn’t much sizzle, and the second time the biko top was a little hard. Came in for a dine-in lunch with my girlfriend and it was exactly what we wanted—hearty, comforting, and a great value. The crispy pork was the star: crunchy skin, tender meat, and super satisfying with the rice. We also had soup on the side, which was warm and flavorful and made the whole meal feel even more like classic comfort food. Service was friendly and quick, and the atmosphere was relaxed—perfect for an easy lunch date. We left full and happy. Definitely coming back.

I ordered fresh lumpia, crispy pata and fresh pancit via online delivery on 31 Dec 2025. When I opened it, the first food I tried was fresh lumpia, & it was extremely sour even the sauce - far beyond normal taste - clearly spoiled. Because of this, I did not eat the rest, and had to throw it away for safety reasons. This is a safety reason that could affect not just me, but anyone who ordered fresh lumpia on that day. I sent them a message thru Facebook letting them know and even called. But it was seen and never replied to. which is very disappointing. I am requesting that this concern be escalated to the management immediately so other customers are not at risk. I have the video that I threw away but could not upload. This review is for a DoorDash order that we ordered at night for our large group. We were craving Filipino food and looked on DoorDash one evening upon closing. We were pretty hungry and we ordered too much rice but we ordered all of this — Max's Fried Chicken, Lechon Kawali, Kare Kare, Dinuguan, Laing, Sizzling Tofu sisig, Sinigang Hipon Soup, Nilagang Baka Soup. It definitely gave us that home comfort and fed 11 adults with leftovers! They were able to deliver it straight to our hotel.

Good spot for authentic Filipino food. They got everything from their famous whole or half fried chicken to pinakbet. Places got really loud with some waiters having loud conversations with some the customers so it’s became hard to hear. The front of restaurant needs to be more aware of their surroundings because we were there waiting for a good minute or two before the lady realized she had customers because she was busy playing on her phone and snacking, which unhygienic especially when serving people.
