Katie and Jay are absolutely crushing it at Sweet Soy. You can feel the care the moment you sit down — warm welcome, great energy, and food that hits harder than a powder day. We had the katsu ramen and the katsu rice bowl, and both were unreal. Crispy, perfectly seasoned chicken, deep broth with real depth, fresh toppings, and portions that make you feel like you got way more than what you paid for. Every bowl looks like something they’d proudly serve at their own table — you can taste the passion. Service was fast, friendly, and genuinely attentive. Sweet Soy is the definition of a hidden gem! Friendly service, fun and flavorful food, and a beautiful environment to enjoy it in. We couldn't believe how pleasant the view overlooking the pond and the mountains was, made even more enjoyable by watching a bike competition for young kids going on nearby. We were so glad we decided to eat here instead of Vail or Breckenridge...which are great to walk around in but not so welcoming and authentic.

Having been to Japan, this place is exactly what you want here in the States. Awesome House Sake, great american interpretation of all kinds of Japanese food and local-like service makes it feel perfect. Love it! Chelsea is the best!

I had a fantastic experience thanks to Shawn and Jay. Shawn, the bartender, was friendly and attentive, making great drink recommendations and making sure my glass was never empty. Jay, the chef and owner, really impressed me with the food — the dynamite shrimp was perfectly crispy and flavorful, and the tuna poke bowl was fresh and delicious. There are options for every dietary preference. Both of them made me feel welcome, and the atmosphere was warm and inviting. Highly recommend! Only place I will eat in Copper!
