My Asian family does a lot of cooking with dried mushrooms. A lot of bulk shiitake and a lot of bulk lion's mane. Specifically, I will rehydrate the mushrooms so that they're nice and soft when I put them in the wok. My family and friends love it so I really end up cooking a lot. I buy 10 lb at a time and go through it really fast.
