They were founded in 1996 and are located in Bloomington, MN. The company specializes in baking traditional and unique bakery products such as muffins, mini muffins, stuffed muffins, coffee cakes, sweet breads, pound cakes, brownies, and snack cakes. More traditional than unique, their blueberry streusel muffin is large, filled with an ample number of blueberries, and coated with a crumbly streusel. Nikolas Bakery has been a go to for my family and I for years. We love their selection of products, especially their delicious muffins! Lately, we have seen and enjoyed a number of new items that showcase vegetables in yummy form. Keep up the good work!

The ‘coffee cake’ muffins are as good as it gets! Very nice crumb, great flavor. I will be sending these to my out-of-town family members, and bringing to my neighborhood’s monthly ‘coffee at the clubhouse’…they are THAT good! And I got a wonderful note back from the owner, who stated they’re coming out with more flavors soon! Only Woodman’s Carrie’s them in my area. Did I say fabulous? And they freeze well.😊

I had some of Nikola’s Banana Chocolate Chip Muffins, expecting somewhat of a dry and grainy texture- but was pleasantly surprised to find it to be nothing of the sort. It’s quite balanced in flavor, along with a good correspondence of moistness to sweetness. Even as a pre-packaged product, It was extremely enjoyable to eat. I would definitely come back to try some of their other products whenever the opportunity arises.

The other night, I bought a package of 4 Salted Caramel Coffee Cakes from Nikola's Bakery, sold at the Circle K store. Since then I've been searching all of the surrounding Circle K Stores for these coffee cakes. They are literally the best coffee cakes I've ever had! The only problem is that they sell out fast. The word is probably out. I've been told that a Grocery store chain may start selling this product. I very much hope so. That way we can enjoy them anytime.
