Mt. Rubirosa has a fabulous atmosphere with even better food! The family style dining allows you to try a little bit of everything. My favorite item was the vodka sauce pasta! It was so good I forgot to snap a picture. They also make a great espresso martini.

I was sooo excited that Mt. Rubirosa opened up in Aspen, taking over a venue that was once all about the apres, and less about the food. To be able to have their famous Tie-Dye pizza in Gluten-free form was a gift. Pioneered by Guiseppe Pappalardo, Maria’s father, on Staten Island in the early 1960s, it was to “dye” for. We also collectively loved their savory Wedding Soup with perfectly cooked Al-debate homemade pasta, and the Cacio e Pepe, and then, with tummies overly satiated we devoured the S’More and Tira Miso desserts. We are so happy to have Maria and Brian and their absolutely delicious food in Aspen, get a table and order family-style or sidle up to the bar … and look for to us in there because we will for sure be regulars … oh, and don’t forget to ask for Facundo as your wai
