Empanada Mama

I stopped at Empanada Mama in Burley, Idaho, and was excited to try it. I love food trucks, and I am a big fan of Latin food like empanadas. I tried three empanadas: chicken, pork, and beef, along with both their regular chimichurri and spicy chimichurri. The empanadas came out hot, flaky, and flavorful. The beef stood out the most, while the chicken and pork, though good, were so similar in flavor that they were sometimes hard to tell apart. The sauces were solid. The regular chimichurri added freshness, and the spicy version had a nice kick without being overwhelming. They definitely helped bring the empanadas to life. We were lucky enough to visit this Argentine food truck on their very first day, and wow, what an incredible start! The chicken empanadas were so juicy and flavorful that I highly recommend eating them over a plate (trust me, they’re THAT good!). The choripán was to die for. Perfectly seasoned, full of flavor, and I have no doubt it’s going to become one of their most popular menu items. We had both spicy and non-spicy chimichurri, which was the perfect finishing touch to drizzle over every bite. The staff was so friendly and kind, handling their first day like pros while making every customer feel welcome. 10/10 — we will definitely be back! If you haven’t tried them yet, you’re seriously missing out.

These are the real deal! Definitely worth checking out! I’ll be going back for sure. I will say, some empanadas I’ve had in my life can be a little dry, but these were perfect. So delicious! And the choripan and milanesa were so good!

The empanadas were fresh & hot. Filling was full, no air pockets. Highly recommend

We went the first time a few weeks ago when they first opened. Even my picky eaters loved it. We went again today and took some home to my teen. He raved while he ate. I recorded a few of his comments. "Is it just me, or did they go from extremely good to even better?" "My experience from the first time to my second has gone up 122 percent. The presentation, the juiciness of the empanada, just everything." Give it a try. You won't regret it.
