Chilaquile Beast

I was blown away with how good this food was. Authentic, flavorful, complex, spicy in all the best ways - I tried the chipotle and queso sauces with pork. And they’ve got carne asada, chicken, and more. For those who don’t know what Chilaquiles is (much like my naive self) it’s freshly fried chips, then cooked with your choice of mouth-watering sauces, and topped with pickled onions and cilantro. The chips keep their crunch and bite despite the sauce?! How do they do that?? I was however, disappointed I didn’t add fried eggs to mine, and I look forward to trying the green sauce next time! If you see the BEAST, stop and treat yourself to these nachos on steroids.

I've been excited to try Chilaquiles Beast for a while now—the menu looks amazing, and I've heard great things about the chilaquiles. Finally decided to swing by on a Sunday around 3:30 PM. There were two people inside the trailer. We waited about 5 minutes at the walk-up window, but no one acknowledged us or opened it. I even knocked politely to get their attention—still nothing. My wife and I were standing right there, clearly waiting to order. We then tried the drive-thru window, thinking maybe that's the main way to order. Same issue: complete ignore. No eye contact, no wave, nothing. As we were pulling away, disappointed, two other customers pulled up, walked straight to the window, and immediately the staff opened it and took their order like it was no problem. Friendly Spanish speakers and I devoured the food and forgot to take a picture. They are at the Ogden’s farmers market every Saturday. I got the “mother clucker” with 2 eggs. Very delicious! The agua Fresca of dragon fruit felt amazing! Champurado (hot chocolate) is a must pair with the donuts nearby

I just had some incredible chilaquiles from Chilaquiles Beast, and I’m honestly blown away. The flavors were bold, creative, and perfectly balanced — every bite hit just right. You can tell they put real thought and love into what they’re cooking. The texture was spot-on — crispy where it should be, saucy in all the right ways — and the toppings were fresh and flavorful. I’ve had plenty of chilaquiles before, but these stand out as some of the best I’ve ever had. Beyond the food, the vibe of the truck is awesome — friendly service, great energy, and seriously creative takes on a classic dish. If you love chilaquiles or just good food in general, Chilaquiles Beast is a must-try.

We ordered on DoorDash the order and they completely messed it up, I'm sick of people not paying attention to detail when we place orders online. It’s the same as the order would be in person. If you are in the kitchen and cannot follow instructions then why are you there. The food wasn't even good because everything was soggy. Not real chilaquiles. Never coming here again.
