I had an amazing dining experience at Taiyo. Such a pleasant surprise as it was my first time at this new restaurant. Chef Aaron creates an exquisite sushi dining experience! The sushi roll combinations and presentations were amazing. My favorite was the sunset roll, the first bite was like Spring was bursting in my mouth with the flowers, fruits, woven with delicate sushi pieces to tie it all together. One word- Refreshing! The Hot temptation roll was delicious, great combo with perfectly blended flavors. Miso Crème Brûlée was somewhat orgasmic with subtle, yet delicious flavors. Being a foodie resident of San Francisco city, I appreciate amazing food-dining experiences. Thank you, Chef Aaron, for your passion for excellence in Sushi. Amazing breakfast buffet. It has everything you could ever want. Chilaquiles were a one-day special, but I loved those. Made to order omelet station. The quiche is out of this world and I loved their lox. Outstanding service / friendly staff. Kept jamming to all the 70’s tunes.

We had such a great experience at this restaurant! The staff were very friendly and welcoming, which made everything even better. We ordered the Hot Temptation Roll and the Crunchy Roll, and both were absolutely delicious! Everything tasted fresh and flavorful.

Come! Even if you’re not a guest of the Gaylord! Taiyo validates parking and it’s worth it for some of the FRESHEST sushi, sashimi, seafood in not just Chula Vista, but ALL of San Diego! We had the pleasure of getting a front row seat to watch Chef Aaron prepare every dish to perfection! Yellowtail jalapeño Spicy tuna with crispy rice app Pacific roll Baked chilean sea bass with a 24hour marinated ginger stick (ginger stick tastes like candy 🤤) Aji sashimi (my first time 🍒) Bluefin tuna sashimi Finished off with the miso crème brûlée 🍮

Outstanding quality fish especially for a resort sushi restaurant. The standard maki rolls (spicy tuna) i thought was just ok but the sushi nigiri and sashimi were outstanding. And they even have Toro on the menu. Prices are not cheap but ok I thought. As I peeked into the kitchen, you can see rows of neatly organized and labeled fresh ingredients. Looks like a well run restaurant!
