We chose Sauvage for our anniversary, and it turned out to be one of the most impressive meals we’ve had in Dallas. It’s an intimate 12-seat chef’s counter serving a prix fixe tasting menu, so this is definitely a place for people who enjoy creativity and putting their trust in the kitchen. Chef Casey LaRue’s take on Texas ingredients, especially through wood fire cooking, feels both thoughtful and original. Every course felt purposeful and there was consistency from start to finish. The technique is clearly there, but nothing feels showy for the sake of it. I’ve eaten at Michelin-starred restaurants around the world, and this experience genuinely compares. For us, Sauvage is a front runner for the best dining experience in Dallas, if not in all of Texas! The menu, the service, the drinks, and the atmosphere were all perfect. The food itself was a fantastic representation of what Texas-style fine dining should look like. Generous and well thought out portions of rich and local ingredients. All cooked with a setup that was amazing to experience from right up at the chefs counter. The Texas Chowda and Wagyu Pastrami were two of the best dishes I’ve ever had. I hate mushrooms and they somehow got me to enjoy a Lions Mane from Austin! The absolute best dining experience of my life. It was an absolute highlight of my Christmas session. Chef Casey and our server James provided an impeccable experience. The creativity was top notch. The wood fire creates an ambiance that isn't duplicated in the city of Dallas or even on a larger scope DFW. This restaurant offers Michelin quality food, and should be considered for any kind of culinary accolade. I will definitely be back.

First time at Sauvage on date night and it is exceptional. Chef Ben & Chef Oscar are extremely knowledgeable and friendly. The whole team are just truly professional and a breeze of fresh air. Our sommelier is also a fountain of knowledge on both wine and coffee! The bathroom has an array of handwash, I literally meant a whole flight of scents & I had to do a double take. The cuisine and taste are well balanced & the sauces are elevating to the hearty taste of the smoke & herbs. Definitely come hungry & you will leave fulfilled with a hint of food coma on cloud 9. The only weak point that didn't hit my palette is the dessert. Taste profile is great, texture I couldn't understand. However, the petit threes in the end - amazing!

Was seated in the 8 PM, second seating of Sauvage, on opening night August 28th. It was an exceptional experience in every aspect. I arrived at 7:45 in the rain and secured a parking spot right in front of the restaurant on Commerce. Valet service is complementary at the Statler, but why not take advantage of front door parking if available? The interior of the restaurant is beautiful and was conceived and executed by the owners Casey and Amy Marie La Rue. The subtle but elegant finishes are beautiful and welcoming. The L shaped counter seating 12 is on 2 sides of the open kitchen, and all 18 courses are served directly from the 3 chefs, Casey, Ben and Oscar. James handles all beverages and supplements the service. Amy handles all baking but had left before the second seating. Every course
