My wife and I visited Rootstalk in Breckenridge during a business trip that also happened to coincide with our 25th anniversary, and we could not have chosen a better place to celebrate. We were recommended this restaurant by a local, and from the moment we walked in, the entire experience was nothing short of incredible. We chose the Chef’s Tasting Menu—seven beautifully crafted courses—and paired it with the wine tasting. Every dish delivered an explosion of flavor and creativity. The presentation was impeccable, and each plate felt like a work of art. The service struck the perfect balance of attentiveness without ever feeling intrusive. 3/5 Stars - Beautiful Start, Disappointing Finish I stopped into Rootstock on a Tuesday evening for their seven-course tasting menu as a solo diner. The experience was a mixed bag that left me questioning the value proposition. The Good: The amuse-bouche and first three courses were genuinely excellent—beautifully plated with rich, flavorful sauces that demonstrated real technique and creativity. The February red wine flight was a nice complement. The bartender was friendly and engaging, which helped pass the time. The Problematic: The seating situation was awkward from the start. With limited bar space and reserved seats, I was squeezed into a corner spot where I had to push away chairs just to have elbow room. There aren’t words to explain this experience. We came for Valentine’s Day and did the 5 course dinner. The service was impeccable, I have never had such an incredible dining experience with service. The food was out of this world, truly. My boyfriend and I both agreed if we could’ve stayed for a second round, we would’ve. In fact, we looked up if they had a Michelin star, because of how incredible it was. Truly a unique experience, and I will be recommending to any and all of my friends in the area or with plans to visit Breck.
We went here for our 45 wedding anniversary and they treated us like royalty! It’s our first visit to Breckinridge and they truly represented their community well. The staff signed a card for us and they gave us the best seat in the house. Very romantic, and the food was amazing. Chris seated us and Zach was our waiter. Zach was outstanding. He gave us great info and recommendations He and the entire staff were amazing. They made our celebration very special. They came highly recommended and they outdid even the recommendations we received. Everyone was super welcoming and attentive and so we highly recommend Rootstalk as well
Visited during the week, chefs table tasting menu incouding wine pairing. Service was excellent, everything was well spoken about including the wine, they answered lots of questions. Food being a tasting menu was of course small, but it was many courses and plenty by the end of the meal. Food was fantastic, tasted great, a few dishes not quite perfect but still tasted great. They spoke about the wine so passionately and it was interesting, wines from small producers and families we'd never heard of before. It was fairly quiet, since we visited during the week, but being at the chefs table downstairs this didn’t impact us as the servers and chefs speak to you regularly.
