I stopped in for the first time and ordered the beef phở, and it turned out to be one of the best bowls I’ve ever had. The portion was huge—there’s barely any difference between the small and the large, and the large is only about $1.50 more. The broth had that deep, slow-cooked flavor you only get in true family-run Vietnamese kitchens, and the beef was tender and plentiful. The restaurant itself feels comfortable and private, and despite being very busy, the service was extremely fast. My waitress was incredibly friendly and attentive. Since it was my first visit, she took the time to explain different dishes, made thoughtful recommendations, and checked on me often without ever being intrusive. Pho 1 in Simi Valley is the most authentic pho restaurant I have ever been in. Sometimes they will play Vietnam music on the background to add to the atmosphere. It feels just like being in Vietnam. The beef soup is rich with flavor, absolutely being brewed the right way. Order number 19 if you are the all beef kind of person. Remember you can ask for no onion or cilantro on the side whatever fits your appetite. The bbq beef sandwich is perfectly made: bread is very fresh, toasted very crunchy and the bbq beef is well seasoned. Make sure to tell the waiter/waitress no jalapeños if you don’t like spice. Pho So 1 is amazing. There's a reason it's always busy! The interior is one large open room, packed with tables and wood paneling. It feels vintage but cozy. The menu has around 30 variations of pho (different combinations of beef, then also chicken, veggie, and shrimp). And it's all delicious. The broth has a rich flavor, the portions are large for the price, and the toppings complete the package. In particular, the jalapenos are consistently as hot as habanero peppers. I stopped by here to grab dinner after I left my work on a Sunday since I had to help out a client. I found parking easily in the plaza this store is in. When I walked inside, it took the worker a while to acknowledge me. They didn't sit me until another guest arrived after me and they seated them first. The lady sat me next to the TV so I was able to watch some football. I been to the Granada Hills and Mission Hills location already so I was familiar with the menu.
