Nacho's Mexican Food Truck

I stopped by Nachos Mexican Food Truck parked by the Chevron at MidCity in Huntsville, and this is exactly how a food truck should operate. I walked up and ordered three birria street tacos. The owner told me it would be about five minutes, and sure enough — by the time I finished pumping gas, my order was already hot, packed, and ready to go. Total cost: $11, which honestly feels like a steal for the quality. The tacos were extremely flavorful — rich, savory birria with that deep, slow-cooked taste — and the packaging was clearly thought through. Everything was secure and travel-friendly, which matters when most customers are grabbing food and heading back to their car or down the road. The setup around the truck adds a lot of personality. Best birria tacos ever. Will definitely go back. My wife tried the chicken quesadilla, and it was really good. We also tried some of the tacos. I've tried other Mexican food trucks and I have to tell you that they are at another level. Will definitely be back!
