Boudreauxs BBQ

Located along Main Street in downtown Canon City, Colorado, Boudreauxs has a nice, inviting look and feel from the street, with a cool mural on the side of the building, and with the light smell of smoke enticing you to step inside as you stroll along. Once you open the doors, you are greeted by a friendly staff and traditional BBQ joint settings, with seating at the bar, on the main floor, or on the outside patio, which is dog-friendly and shaded. This all comes together to create a laid-back vibe and environment, perfect for enjoying some barbecue. This bbq was delish!! I’m celiac and recently visited canyon city / the royal gorge and found a few good eats in town and this was one of them. As of December 2025 all of the meats are GF and none are braised in beer any longer - the collard greens and beans are also safe and were delish!!

Well I am from Texas. So going to a BBQ place to eat out side of Texas is a adventure. We'll I found a place here. The pit master has been doing BBQ said for 20 yrs and boy does it show. The ribs and brisket was so tender. Oh I forgot about the sauce. They have hot and reg. I loved the hot. All home made. They said to try the cheese and mac.. ohooo. Bake beans was very good also. We just bought a home here in Canion City and will be a regular customer here form now on. Heck I even gave the pit master a $5 tip also so good.!!!

Came for dinosaurs for the weekend and stopped by here to get a brisket baked Potato and it was so good it had me and my boy roaring!!! Best bbq I’ve eaten in years! Owner was awesome real sense of ownership! Left feeling blessed!

Followed our noses from 5th street, and unfortunately, they were out of everything except brisket so we didn't get to try those. We ordered a brisket plate and brisket baked potato with the last cheddar jalapeño sausage. We are from Texas and this establishment is Louisiana style (assuming from decor). Brisket was a bit dry and needed the sauce which was nice and earthy. Coleslaw was not too sweet and fresh, and the Bacon baked beans were sweet, earthy, and delicious. I ended up putting the baked beans on top of my brisket baked potato which I enjoyed. It wasn't too hot but had plenty of toppings for it being huge (we split it). The sausage we hated, was starchy like it was mostly filled with overcooked beans (no grease, no meat texture, no flavor).
