Third Proof Pizzeria

Tucked into a modest strip mall in Montville, New Jersey, Third Proof Pizzeria is a small place that delivers big flavor. With only six tables and room for about twenty diners, it feels more like a neighborhood secret than a typical pizzeria. What it lacks in size, however, it more than makes up for in quality. I first heard about Third Proof through the steady buzz on Instagram. Photo after photo of beautifully crisp pizzas kept appearing in my feed. Normally I wouldn’t drive thirty minutes just for pizza—especially in New Jersey, where good pizza is never far away. But when enough people start talking about a place, curiosity takes over. I am an East Coast pizza enthusiast. This is one of the most delicious pizza I’ve ever had. We ordered a couple slices, then decided to order a New Haven to go and then got a mushroom and onion pie to go as well. The crust is crisp, light and flavorful. It is sour dough so it is lighter than flour. The sauce is slightly sweet without too much tang. The pepperoni were a bit spicy and small enough to be a crunchy delish add on to a slice. They shaved fresh parm onto each slice with a fresh basil leaf as well. This is lovely. I wish them great success and will return to try more things!! Be advised Friday evening wait for a pie is about 1 hour or more so order ahead.

What an absolute gem of a pizzeria! Saw a few photos of this place on social media and thought we’d check it out- so glad we did! What immediately set this place apart was the quality- one bite in, you could instantly tell the quality of ingredients and the amount of effort that must have gone into perfecting their recipes. Dough had incredible texture and was the right blend of crisp with some chew, sauce was robust, and the cheese blend allowed all of the elements to balance perfectly. Really can’t decide if the square or the round were better, we loved them both equally. All cooked to perfection. All that being said, the chicken parm was just as good as a pizza. Based on some of the reviews, I guess I got lucky on a Sunday at opening to get a Pizza. I am more of an old school fan with Pizza. Third Proof offers a thin crust style which is popular with the younger generations. This was good pie, but I prefer more sauce and cheese. Very tasty pizza though. Hard not to keep going once you start. For a new pizzeria, they are doing a great job. Would say they would be in the Top 25 for a thin crust Pizza in NJ. Which is solid for their Rookie Season. Looking forward to going back for a different pizza and doing a feature article on the new place for the Pizza Hunters App.

First time having New Haven style pizza. If the real deal from Connecticut is anything like this I'm sold. Two of the most delicious pies I've ever eaten. The people were great. Gave it a five on atmosphere but it's a pizza place. It really doesn't need any with pizza like that! Try it now.
