Ruby Sunshine

Laura was our server. She was phenomenal and a pleasure to work with during our visit. We shared our previous experience at the South location and she definitely increase our confidence in returning back. The food at the Johnston Road location far exceeded our expectations (especially the eggs). The Bananas Foster was better than our previous experience and the Beignets came hot and delicious! Will definitely return to the Johnston road location as our new go to while visiting Charlotte.

Server was very cheerful and friendly. We went close to closing time (50 minutes to close). There were not many patrons on a Tuesday afternoon. But service was very slow and the food was just ok. The omlette was mediocre. The toast was really not up to par. The coffee given in a coffee mug and was the last batch so it became very cold by the time we got our food served and started to eat. Overall the food quality could improve. My son liked his chicken sliders. The French toast dessert item was meh!!

Andrea is an amazing bartender. She is super sweet and attentive. She recommended some amazing food that was delicious! The margarita, trifecta were amazing. She is the best! Thank you Andrea for making this day even better. I appreciate it! Week later: I’ve come back again to try something different. I’m becoming kind of a regular now 😂 Green Fried Tomatoes are on point and just ordered them again! Andrea is my bartender again and the Tequila Sunshine is amazing! Last time I had the Trifecta and for a person who always turned their nose up to sunny side up eggs, ate every last bit of it. Today I ordered Pumpkin Chai Stuffed French Toast. 20260124: I thought to try Ruby Sunshine in advance of the winter storm about to hit Charlotte, on the recommendation by a friend. The Service is kind, thought, friendly and collegial. A couple servers worked together. I ordered Ruby's signature Benedict Trifecta. While okay, I expected better. Benedicts should have runny yolks. Ruby's poached the eggs, which is traditional, however, Ruby's didn't use a poacher. Poached eggs come out much better in a Poached than by cracking eggs into simmering water. Much of the whites were lost and the yolks were overcooked. Ruby's used biscuits instead of English muffins, which was interesting. I still would like some crunchyness -- maybe Runt's might briefing put the biscuits under the broiler before assembly? Ruby's used Tasso sauce (Cajun pork gravy)

Even being busy we were seating quickly everyone was friendly. But mr stacey really stood out he was so respectful and reflected well on this ruby id definitely want him to serve us again And the food was fresh and crisp and perfectly seasoned
