Red Chimney Bar-B-Q

We were feeling so BBQ on our travels in Carlsbad. So we made our way here. It was okay. The staff is hella nice and on point with making sure we were taken care of. I ordered the Fort Knox potato with the chop mix. It was alright. I’d probably try some else if I want back. My friend ordered the Brisket which he said was okay. But he was disappointed with how peach cobbler came out with the ice cream being basically soup.

This place was amazing. I came here hungry after a long hike at Guadalupe. Got their Half & Half Dinner with brisket and pork with sides of salad and Mac n Cheese. The meat was juicy, soft and really good. The bread buttery and warm which I enjoyed. The Mac n Cheese is ok. Definitely come hungry!

Colleen and I travel the country having barbecue in every town we can. In Carlsbad, New Mexico, we chose Red Chimney Barbecue. It was founded in 1954 and still going strong with the third generation of family, so they must be doing something right. We are eating low-carb so we started with the chef salad which was flavorful. The only critique I have for the entire dinner was That the chef salad was made with iceberg lettuce, which is so yesterday, when Romain lettuce is so much more flavorful and healthy. Onto the meat! The brisket had a very nice smoke ring, it was extremely tender and moist, even though it was very lean slices. I like that. The sauce was good, but the brisket stands on its own merit. Most barbecue places have baby back ribs, but red chimney has The more meaty spareribs.

Just passing through. Place is very nice. Service was good. Ordered the sliced brisket sandwich and asked for the moist or fatty brisket. It was not tender. Bit into sandwich and couldn’t bite through slices. You could see smoke ring on slices. Hoped it was better than what it was. Used to cut with a fork brisket. Had the potato salad and it was ok.

There are also collectible plates, dishes, and unique older-era knick-knacks that make it feel cozy and interesting. The food was great overall. The pecan chicken was fall-off-the-bone juicy and absolutely delicious, and the chopped BBQ had a nice hint of sweetness. We ended up with a double order of mac and cheese because it was so cheesy and satisfying. The dinner rolls were also a standout—stuffed with chopped BBQ, they were a real treat.
