Puerto Rican cuisine, also known as cocina criolla, is a blend of Spanish, African, Taíno, and American influences that's characterized by vibrant colors, layers of flavor, and incredible seasoning. The roots of traditional Puerto Rican cuisine can be traced back to the 15th century, when Spanish inhabitants of the island began to influence the cooking. Puerto Rican food often includes abundant tropical fruit, like guava and mango, starchy tubers like cassava (yuca) and yams, legumes, squash and corn, and both shellfish and white fish.
