Fairbanks

Honestly as close to a Michelin star restaurant as I've ever been. We arrived early with the intention of a great cocktail and one app. What a treat to be served by one of the owners, Dan on point at the bar...he shared several amazing stories about the history of the building, how he got started in the business...and the talented people he had behind the scenes, and in the kitchen. We were able to personally meet the chef (sooooo talented and humble) as he provided us with a special treat of chicken liver mousse and homemade bread. He delivered it, and Said Hello. This interaction is important to me. I follow all the restaurants in this town weekly on Facebook. We live 2 hours away and only get here a few times a year. Have been wanting to try here and went in on a whim on a weekend and was able to be accommodated with a bar seat! From front of hour to those that took care of us at the bar the service was amazing! On top of the service the meals were incredible as well! They did have a few NA options which is always a plus as we aren’t drinkers! The bread was amazing! The burger was incredible and the crispy potatoes were incredible! The desserts were equally as delicious! I already can’t wait to come back! It’s amazing to see such a great new place help to elevate Buffalos food scene even more!

Absolutely loved the Michelin-quality Chef’s Table experience. Each course creatively combined seasonal ingredients delivering wonderful flavors. Some of the highlights were the Spicy Tuna Handroll and the Iberico de Bellota Pork Secreto, but everything was delicious. We can’t wait to go back!

Wonderful evening at Fairbanks. First off, love the renovation work they put into the historic Frontier House, great atmosphere for dinner or just for drinks! The food was fantastic. A lot of thought put into the dishes and ingredients used. Would highly recommend.

I would highly recommend Fairbanks! The food was incredible and done so well. We’ve seen several pictures of the rolls so of course we had to try and the corn butter didn’t disappoint. Of everything the eggplant small plate was probably my favorite, I would’ve eaten that as just a meal. We were able to make same day late reservations but the restaurant was busy till close so reservations seem necessary. We will be back!
