CoBo Sushi Bistro & Bar

Cobo has the best sushi in Boone — hands down. We went for a date night and loved every minute of it. From the sparkling peach sake to the Appalachian Roll and Yosef Roll, everything was absolutely phenomenal and so fresh. We made reservations and were seated right away, which made the experience even smoother. Parking can be a little tricky since it’s downtown Boone, but there are several public lots nearby that make it manageable. Overall, such a great experience. We’re already looking forward to our next visit!

Came here to check out what boone has to offer. First of all, the food here us decent, Id give it a 3.5 but 3 since thats the ratings I can only go for. It was a busy night and food took awhile to get by, prob 30-45 mins wait. Sushi was creative but inconsistent for some reason a few pieces tasted better off from the same sushi roll than the rest. Same for the others. Duck wings were great which exceeded my expectations honestly. Kbbq Tacos sucked but as a foodie I still ate it, just that I had way better and the combination wasnt it. The pork belly was tough, kimchi just didnt mix as well as the seaweed salad. Sounds a bit harsh but Im coming from a point of having had sushi from different places such as ny cali fl etc. For Boone, its good enough. Also, if you dont see asians eating at a

CoBo is by far the best sushi I’ve ever had. The dumplings were amazing and so was the sushi roll our awesome bartender recommended - the green dragon roll. My husband and I loved it so much we want to plan another trip to Boone just to eat at CoBo.

We visited CoBo twice a week all summer and can't wait to be back in Boone again soon to go back. Thank you to our great servers Jordan, Jamie and Reagan, and to Sushi Chef Extraordinaire Joseph. Great sushi and service!

My wife and I have stopped by here a few times, and this is the best you are going to get if you want sushi in the mountains (which isn't saying too much). I don't fault the restaurant for not having the highest quality seafood since we are so far away from the ocean, but I wouldn't stop by unless I was really craving sushi. The cost can also be pretty expensive (which also makes sense considering the logistics to getting seafood this far inland) depending on what kind of food you are ordering.
