Different experience in terms of wait! I got there 15 min before it opened on Friday, good weather and all, expecting a line but I just so happen to be the very first person there. I ordered the seasonal (spicy vodka) and Nduja to-go and all in all it took about 30 minutes to get my pizza! I will say that even 4-5 parties behind me were being quoted about 45 minutes of a wait but the pizza was delicious.

I went to Ceres on an extremely cold Saturday, so I’m not sure if that affected my lining up experience, but I arrived a couple minutes before 11 am and was about third in line. Promptly at 11 am, we were let into the Ceres restaurant to place our order. We ordered two pies and asked for pick up at 6 pm, since we wanted to eat there for dinner. We came back around 5:45 pm to look for a seat, but when a seat did open up, the server told us we had to wait for other parties she had to seat before us. It was slightly annoying since we were initially told that the restaurant was first-come, first-served. We ended up waiting and getting seated at a seat we still had to find for ourselves closer to 6:05 pm, when the first pizza came out. We ordered the white pizza, which came with chopped o

Let’s start off with when entering you go to the counter and order what you want then they give you a time. When to come back in or pick it up on a Saturday around 4:30. They told us to come back and pick it up at 5:30. Got the classic pizza. Staff was very kind. After arriving in at 5:30 I just had to wait about 10 minutes. Pizza was definitely fresh. Then pizza and I do wish they added a little bit more cheese to it. In my opinion, the pizza is good, but I wouldn’t wait an hour just to come get it. I feel like there are better pizza slices in New York. No heat on them. The pizza is good, but I think it’s just overly hyped but yes, a person should try it at least once. Absolutely perfect pizza. I was on a lifelong search for the best pizza but it concluded at Ceres this past weekend. They solved it. Crust is perfection: light, thin, crispy but with a bit of chew. Balanced sourdough flavor that is present but not overwhelming. The cheese they use is incredible, best you can get I imagine. Sauce is perfection. Every aspect clearly curated and selected intentionally to complement one another. Every pie looks consistently the same which is impressive too. $1.50 box charge is something I hadn’t seen before and I could do without. Just make the pizzas each $1 more? But really no notes on the pizza. It’s amazing, actually perfect.

Finally made it to Ceres! Got there just as they were opening at 11a and we were eating our pies by 12:15p. I’m a pizza eating born and raised New Yorker for context. The cheese pie is very good, exceptional even, but not the star. Crispy dough and undercarriage. Cheeses are top quality. The sauce more complex, but not tangy (I prefer tangy). However, The Njuda pie was next level. I mean a truly unique melding of flavors that only actual trained chefs would achieve (as they are) vs traditional Pizziolos. It takes several bites for your brain and taste buds to wrap itself around the complexity of flavors but once settled it became one of my favorite top ten slices of all time for it’s execution, flavor, and originality.
